Canon digital cameras - what's the difference between the different models: SD1000 or SD800...?
...or SD750?
Are they just different versions of the same thing? ie the SD1000 is newer and supersedes the others?

The SD1000, 800 and 750 are all completely different cameras, with different features, different case sizes, and different release dates...
You really need to look at Canon's website to make a fair comparison.
2. The answer to your question is Yes and No.
Yes - "Are they just different versions of the same thing"..
The basic feature set is the same. They are built of the same sensor type and sensor size. They contain the same feature set expect the Megapixels on them and the very useful Optical Image Stabilization in the 700IS, 800IS and the 850IS.
No - "the SD1000 is newer and supersedes the others?"
In terms of the build and style they are pretty different. The 750 and the 1000 look alike with a more boxy look to it with hard edges and the SD800 and 850 look similar with more curves around the edges.
A very important feature that the SD-750 and the SD-1000 lacks is the Optical Image Stabilization which is very useful to avoid blur if you hand shakes or the subject is in motion or when taking photos in low light. So since the 750 and 1000 lack this feature i would call it an upgraded version of the 700 and the 850 respectively.
If you are planning to get one of these then i highly recommend you to get either the SD800IS or the SD-850IS with the Image Stabilization feature unless you are madly in love with the design of the SD 1000 (which i’m not :) ).
